I would re-gear for heroics to not have so much hit rating. You only need 6% to cap heroics, the rest is wasted. Save the hit gear for raid bosses.
Also, check out a level 82 target dummy and see if you can hit 1500 DPS with it. That's a very respectable amount of heroic DPS for starting out.
If you have problems even breaking 1000, do not pass go, do not go into heroics just yet.

I agree with this statement. Reducing your (currently too high) hit chance will allow other stats to be on the gear in its place, which will actually result in a DPS boost when entering Heroics. I did this with my own lock, and over the course of re-gearing, watched his damage climb significantly.
However, definitely don't just vendor the extraneous hit pieces. You're gonna want to be able to get into raids, where the hit cap jumps from 6% to 17%. And, your spec, while very strong, doesn't have any hit from talents. Definitely look into acquiring further hit gear (the trinket from the H-VH final boss is a good example) for future raiding.
As for DPS, definitely break 1k, and 1500 is a good target number for starting out.
