T7.5 Set bonus is VERY good. If you have 4Pc then wear it and offset the helm.

Tier7.5 Has 5 pieces to the whole set, the bonus' are from 2 Pieces and 4 Pieces, offsetting is just taking one of those pieces out and replacing it with another item. You still have the 4 piece bonus, but not the full 5 piece set.

Fist/Sword (main/off) used to be a pretty decent build (early wrath and some parts of later TBC) as the off-hand sword spec proc generates extra mainhand hits so the fast sword offhand gave more hits with a fist mainhand that had extra crit. As said above though with the introduction of changes to Lightening Reflexes dual spec builds are dead, you can no longer take 2 specialisations AND LR. LR is a required part of a combat build now.
Grab a pair of weapons that match a certain weapon specialty (consider librarians paper cutter for a fist/dagger pairing, it's VERY VERY good, like naxx 25 daggers needed to beat it good).
Keep the mainhand weapons (for combat at least) above 2.5 in speed (so slow as possible) and the OH below 1.6 (fast as possible) and you will be fine.

Use the combat spec listed in this sticky but move the points from Sword Spec to CQC.
