What professions would be best for restarting on a new realm?

I found inscription to be best on new server. you start making money very early on, as soon as you can make glyphs.
What I do, is bid on underpriced herbs, or buy them out - but normally buyout isn't underpriced.
Than make glyphs.
The BoP trinkets are also nice once you level up, and the shoulder enchant is great.
This requires no gathering skills, you don't need to be a herbalist to do it, although it will save you money in the short term, before you're able to make glyphs.
BTW Drooood, there are obviously professions better suited for some classes/rolls than others.
I'll give you an example: PVE DPS and healers won't get benefit from mining. Extra HP for what?

Inscription + minor glyphs is awesome on my server at low lvls. My 30 Priest has >300g after buying a mount for himself and my Shaman ;)
Another great choice is Enchanting. Disenchant stuff, sell mats, profit. Especially awesome in the long run.

lol, you right. Messed up there, I recently power leveled jewelcrafting on my toon, and it' same toon as I have inscription on. Got 'em confused.
Jewelcrafting I'm not recommending, I spent 2k to power level it, and so far I don't see how to make money, well I just started on the dailies.

They require the least amount of extra effort because they level as you level, and you can sell the mats on the AH by spending just 2 extra minutes of time in your faction's capital cities. They undoubtedly provide the greatest time investment:profit ratio.
You said you don't want to level mining/herb again, but skin/herb will be the least effort with the highest profit. Sorry if that's not what you wanted to hear lolz.

If I was going to start on a totally new realm, I'd go with Herbalism and Skinning or Mining. The gathering professions will provide a great income for someone starting out.

When I put a toon on a server where I don't have any others, I always get Enchanting. It's a good money maker when you don't have a support structure around you. Buy low level greens for 5 silver that generate 30 silver worth of dust, resell on the AH where enchanting mats have no deposit. It's low risk and low work, you just need to generate the silver to make the purchases.
I usually pair it with a gathering prof.

If it hasn't become a second sense to you, I would take up fishing as well. As I said in another thread, the grays you fish up when your fishing skill is low will give you some nice cash for a beginner. Examples:
