I took Inscription and JC for my DK, because on the scroll of recall and shoulder enchants + BoP
but i think both are profitable... just inscription is kinda.. take too much time....
personally don't suggest to get collect prof, cause they took time, esp. now only gain 1 per nodes, etc
As for Leveling them....
Inscription took me 4kG
JC took me 8kG
I doubt how much will BS take...

JC is awesome for the profession-only items (the Monarch Crab will get you through all heroics and even into Naxx). Having gems on your own is also great. And it is flexible, just as BS.
With the upcoming profession changes getting Alchemy as 2nd might be very much worth it. Unlimited and free potions/flaks will save TONS of money.
Blacksmithing is also nice simply because it is flexible. With other professions you basically only have sta as bonus, with BS you can socket anything you want (like def rating or whatever is needed most). Don't get me wrong, sta is great - but being flexible never hurts. Additionally you get lockpicks so you don't have to get a Rogue for unlocking stuff which can be convenient.
Enchanting is my favorite. It gives you easy access to enchants (again: convenience) and most importantly it allows you do disenchant your old gear and greed-loot which you don't need, giving you quite some extra gold.
Those are my 4 favorite professions. I'd pick any of these 2 on every char.
Generally the profession bonus is very balanced. JC and BS are a little more flexible but it's hardly a major difference. Chose your profession based on what it provides

the profession bonus, that's what really counts.
