When I'm fighting a pally and they bubble, I usually heal myself while they do, then try to put some distance between us so I can restealth, effectively resetting the fight. Bubble isn't OP, all it does is delays the same end as the fight would have had if the pally didn't have bubble. I wouldn't even call it infamous, I don't think its all that useful, unless you're gonna hearth =)
I would hardly call my choice to run as 'tail between my legs' -- There's no use in just standing there if I can't hurt you. If I can use it as an opportunity to restealth, that's YOUR loss, not mine. In fact, if we're gonna be throwing around 'cowardly' names -- I think the guy inside the bubble is far more deserving than the cat outside of it.

If hes a resto druid, he has no way to win 1on1 against ret since its a class that can heal. But 1v1 its very easy to survive a very very long time against a ret pally since they don't have MS. And if this is a BG situation, all you need is to survive/stall long enough for people to help you. Pop barkskin during HoJ immediately if you don't have Hots up as all pally damage is front loaded burst. If you do have hots up you can save it for wings if he hasn't popped it. It would be very difficult to force a pally to bubble as resto, but if you get him to do that, thats good enough (means you survived at least 5 mins probably)
Key things to survival of course are pvp talents and gear. And knowing what other people can do to you. When alot of newbies go against pallys, all they see is that they are stunned, then it is followed by the golden ww, and don't realize why they died or what was even used against them.
