As far as I know, and from what I've read on the EJ forums, it will stack in the same way that ignite or deep wounds will.
Say you hit a deathcoil that would cause an unholy blight debuff worth 1,000 damage. The damage procs every second for 10 seconds, so this would even out to 100 damage every second. The mechanic for unholy blight is that it's like a life bloom.. only with damage. Starting out small, it adds up to 1000 damage over 10 seconds. But lets not worry about that for now.
So assuming that it is in fact 100 damage every second for 10 seconds, say you tossed up a new death coil right after the 7th tick. This deathcoil procs another 1000 damage unholy blight. The damage from the previous unholy blight will than transfer into a new unholy blight. So you'd have 300 damage left over + 1000 damage from the new proc, evening out to 1300 damage over 10 seconds.
This is my understanding of the new unholy blight.. But it should be true. It may not seem like much, but if glyphed you can get 42% of your death coils to proc these debuffs that stack slowly.. and over a long fight, say Patchwerk.. you could be seeing some pretty hefty ticks near the end of the fight. Those ticks could be the difference between hitting that pesky timer for the achievement or not.
