Don't even try, no one will EVER beat druids in hps, but they usually have twice as much overhealed as the second on the list.. So most of their healing power is wasted.

You are significantly undergeared for Ulduar.
I would say a good start would be: Spell power to 2k. Crit to >25% unbuffed.
Some quick gear shuffles:
Replace your Medallion with a pve trinket.
Replace your chest gem with 8sp/8int, 16int, or 19sp - you don't gain enough from the socket bonus for it to be worth a blue gem.
Other than that, run more Naxxes.
(Also, I can link WWSes of me beating the pants off of druids, who very rarely ever place high on overhealing meters due to their class mechanics.)

Shaman hps depends on how much damage is going around. When healing the understudy in heroic naxx, we can hit up to 4k hps. However on fights with lower damage our hps will be significantly lower. Not that it matters too much. However, if you have someone who's competitive with you, it can be important to make that point.

I can take note of HPS on my next raid and link you my profile/armory. Unfortunately WWS doesn't seem to keep track of that kind of information, otherwise I'd be able to dig out a good average for Ulduar fights.
As Meso notes, though, HPS is largely dependent on what kind of damage is going around and is a shaky foundation for judging overall healing - unlike DPS there's not always something to heal, and the better geared your tank/raid is the less you have to heal them.
