And Shaman healing is very fun IMO (Chain Heal & Earth Shield FTW).
Use elemental for leveling and resto for pve.

If you enjoy Enhancement so much, why not use both specs for it?
"Wahh, what ever do you mean?" you probably ask, well allow me to explain.
Spec 1 for PvE (leveling, grinding)
Spec 2 for PvP (battlegrounds, etc)
Just an idea.

Thanks for all the comments above.
I am currently leveling as enhancement, but somehow, the elemental tree just seems so much more... epic.
I personally don't PvP much so enhance/enhance is probably not a good idea.
I am pretty sure I will be tempted to go ele sometime, but which do you recommend? Trying elemental once i get to outland or once i get to northerend?
As for healing, I am not sure how it is to heal with a shammy as the only heals im doing are HW and LWH on myself when leveling XD I might like it, so I will try it once i get some gear.
The Elemental concept seems epic for me, mostly because I prefer casters over melee.
If you prefer melee, you'll find Enhacement much more fun than ele.
I'd suggest you to choose first which will be your endgame main spec: Are you gonna be a Healer, a Caster or a Melee?
Once you choose your main role in raids (the role in which you'll probably strive for perfection and be the best you can, and the one you'll dedicate most of your time/effort). Then you choose your off-spec. Use whatever criteria you want when choosing this. Some people prefer a spec that shares gear with their main spec (Resto-Ele for example, or Resto-Balance for a moonkin). Others prefer to have a PvE spec and a PvP spec. Healers/Tanks tend to choose a DPS spec as their off-spec to ease soloing/farming/dailies.
My suggestions:
1) Choose what you'll enjoy the most. This can't be stressed enough. Enjoying is the main objective of playing a video-game!
2) Keeping nº1 in mind, choose what you want to do at endgame (pve, pvp, dps, heal, caster, melee, roleplay, gank lowies, dance naked in mailboxes, etc)
3) Now choose the combination you think will help you the most to acomplish your goals (always priorizing what you like the most):
You said you don't PvP much, so I think you want to choose a PvE/PvE or PvE/Solo combination (correct me if I'm wrong).
Healer main, Dps off:
a) Resto PvE/Elemental PvE or Solo: The pros of this combination is that both specs share some gear. And the playstyle doesn't change too much (you're still a dude that cast spells at range)
b) Resto PvE/Enhacement PvE or Solo: Though you don't share gear here, you have the advantage of variety. Tired of casting spells? go to the front lines and smash faces! Feral Spirits are cool, and Insta-wolf (if you spec into that) is very practical for soloing.
The problem is you will need to keep two entire sets of gear instead of one main set and some spare parts.
Dps main, Healer off: Just invert the order.
