There are 3 different sets of Totems.And you drop them with Call of Fire,Water and something else which I cba to find out it's name right now.
The point is,you set up 3 different sets and you have 3 different skills for each set.

Maybe I imagined it but did I read that they got rid of Totemic Call in 3.2 for the new Call of Whatevers?
We've got 4 Calls now.Three are for setting down a different set of totems and one call is working like Totemic Call and just has a different name.

is it possible to customize the totem sets or are they set in stone?
They're customizable.
Each 'Call' set allows you to choose a combination of four totems (1 of each element). And when you use that Call, you drop the four totems selected at once.
It's pretty simple.
