BM hunter and a warlock both hve excellent survivability. Send in the voidwalker/bear and then just stand back and kill everything.
If nothing else, your pet/demon can hold aggro while you run away. When you get out of combat, rez them and keep going.
Druid/Hunter or Druid/Warlock is probably your best bet, but that's just my opinion.

If you guys go feral/enhancement for leveling, and both dual-spec resto, you will melt faces when duo'ing quests, and find it extremely easy to get into instance groups. One of the reasons I love druids and shammies is because of their utility.
A feral/enhancement leveling combo is nigh unbeatable as far as...uhm...everything. You both have heals, you both have fantastic damage potential, she can go bear form to tank, you WF it up and drop everything, with an occasional heal on her...seriously.
You get mail and dual wield at 40, she gets dire bear form. Cat form drops mobs so fast it's crazy. She can get bleeds on everything and you drop totems...

really, really want him to make a druid now...
EDIT: prot pally and enh sham will still be good and all, but I really wonder about the possibilities of feral/enh...I think they would be nearly limitless.

I'd go for shaman or shadow priest, if you want to be able to save some situations with heals/rez. Both can be quite good at high level and do some nice dps. The shaman probably has more utility (ie more of an impact while levelling)

Ok, you have me all fired up now. I know someone else posted play what you want, dying is not that bad in this game. While I tend to agree, since we only play about an hour to hour and a half a night and then on weekends, I can't stand waisting time corpse running. We rarely died in our first set of characters (Pally/Rogue) and we got to 60 in 3.5 weeks, which for us that is extremely fast. The shaman/druid combo has me intrigued so I think we will give that a shot, shoot, you get to lvl 20 in about 8 hours with RAF so we are not out that much time if we don't like it. Thanks again everyone for the good responses.

EDIT: If she mostly tanks, and you mostly dps, just remember that you get your biggest class- and spec-defining abilities at 40. Dire Bear Form and Dual Wield are sooo huge. She goes from 180% armor contribution from items to 380%, and you...well, you get dual WF weapons =)
At 20, I garauntee she will want to keep going, becaue thats when she gets cat form, and cat form is really, really exciting when you first get it. Just like WF weapon at 30.
Another thing worth mentioning is that when she gets cat form, you will get ghost wolf. I highly suggest speccing it down to instant cast, it makes it much more convenient, well worth 2 talent points. I also highly suggest that she spec into the Feral Swiftness talent, which will give her a 30% speed increase in cat form. That way at level 20, you have a +40% travel form, she has a +30%
fighting
travel form of sorts...
Oh, and just to top it all off, with the shaman buffs in 3.2, you can go from running in travel form to normal form, with all (4, or however many you usually use) of your totems down and wtfpwning in just 2 GCD's.
Dude, now I'm really pumped up about enh shaman/feral druid too...

I made up a couple talent build to run with until level 60, that should prove pretty effective. I've played both shaman and druid extensively, in case you're wondering about my "qualifications", if you will.

Enhancement Shaman
Have fun with it dude...I mean, I don't really see how you couldn't, but whatever...
