Now, Gothik's Cowl certainly has hit rating on it and is not a healer item.

There are different ways to play disc, so I'll just post a list based on my playstyle where I try to maximize sp, keep my haste between 10-11%, and grab as much crit as possible. You should have more than enough int and regen with these pieces, and I gem them with the following:
Runed Scarlet Ruby
Luminous Monarch Topaz
Brilliant Autumn's Glow
Purified Twilight Opal
(Controversial I know, but I dual spec holy and the spirit is worth it. I also like squeezing the most I can from set bonuses to maximize the stats I get from each piece of gear for both specs.)

Those Ulduar craftables are very nice, and
Cord of the White Dawn
is actually BiS for Ulduar too I believe. I actually picked it to receive my
Brilliant Stormjewel
for that reason.
If your guild isn't running Ulduar regularly, however, it might be wise to wait til 3.2 to have them crafted. The prices on Runed Orbs should drop pretty dramatically then.

Don't stick strictly to Naxx, try to get into OS (zero drake for now, more as you gear) and Maly groups, too. They're all meant to be run at the same gear levels, although for Maly you might want to be wearing mostly Naxx gear.
And to answer your question regarding the set bonus, don't worry about it. The two piece is decent, but not worth passing up much better itemized alternatives to get it. Digested Silken all the way.

Yes...I wouldn't bother buying any gear from Ulduar craftables. Sure, I could use the gear just like almost anyone else, but on my server, the mats for Cord of White Dawn go for about 6500-8000g. As far as I'm concerned, no single piece of gear is worth that much (though I have seen Darkmoon Card Greatness trinkets go for 8-10kg.

Yeah, the gear is meant to be
bought
by wealthy toons. But once your guild is in Ulduar, talk to your GM about getting some orbs. My guild has a pile sitting in the bank waiting for guildies to get their mats together.
If you're not a tailor, however, the cloth alone will run you 2k for the twenty pieces it takes to make one item.

If I could recieve the orbs for free, the cloth would be more than worth the gear imho. Granted, I can afford it and don't see any other gear I'd be willing to spend money on.
