I regularly switch between holy and prot, often several times in a single raid night.
I find them both fun and rewarding, but both can become boring if I do just one for too long (which I why I switch).
I leveled myself mostly as prot right after BC came out. My intention was to be holy, so even by the time I hit 70 I had extensive experience as both already. I guess I can't really help you in respect to switching after only having done one for a long time.
A lot of the tools I use to tank I also use to heal and vice versa. Mostly just having a keen eye to watch fight mechanics and the rest of the raid at the same time helps. If you can watch everything that's going on at once it helps both jobs tremendously. It actually inadvertently turned me into a raid leader.

In other words, if you're not a really good tank, it can be hard to have the opportunity to actually do it.
Or if you're a good healer, even if you're a good tank, you'll often be relegated to healing.
