Well, JC + either mining or LW
But a small marging. JC give 3 more stam and mining/LW 2 more than other profession.
Alchemy however is one of the worst. Bonus is only 320 hp(comparend to 48-51 stam for other profession), which is not even equivalent of 32 stamina because it is not multiplied by King.
Hopefully Blizzard will fix this in 3.2

All crafting professions have the same bonus. Yes, they might differ by 1-2 stats (meaning one gives you 48 sta, others 50 sta) but that's completely irrelevant. Just consider them all equal. There are only 2 exceptions, Alchemy and Engineering.
Both mining and herbs are fine for tanking.
Alchemy will get a major buff in 3.2 so while it is maybe a bit underpowered at the moment you might regret it in a month or two if you drop it now.
My advice: Don't change your professions.
If anything then dropping Herbalism and keeping Alchemy is probably the better idea.
Since all crafting profession benefits are about equal you shouldn't chose the new profession based on the bonus. It's the same for all other professions anyway. Exceptions are BS and JC since they allow you to get agil (which is awesome for feral tanks) instead of sta. Still the difference isn't that big and I certainly wouldn't spend ~5k gold for that.
So what do other professions offer besides the bonus?
JC: Monarch Crab (which will be replaced in Naxx), agil instead of sta
BS: Lockpicks (I love them, never look for Rogues to unlock stuff ever again and enter any low lvl instance without needing keys), agil instead of sta
LW: Cheap leg enchants (however leveling LW will be a lot more expensive then buying the occasional frozen orb for the good enchant)
Enchanting: Disenchant your old stuff! That is probably the most awesome utility to have. Most useful when leveling (for all those quest rewards) and in heroics (often enough there is no enchanter present and vendoring purple items just doesn't feel right). Additionally you can enchant your own items which saves you the hassle of finding an enchanter every time you replace stuff.
In the end JC will only offer a temporary advantage (the Monarch Crab). BS or Enchanting would be my pick.

The other thing if you go JC/alch you will be able to make your own metas which would be a nice bonus. Other then that I think they really want to balance out all the crafitng profs at 3.2 so you might want to wait for more info...

In my opinion the best tanking prof at the moment is Engineering. The
Armorenchant
on the gloves is huge. If you have a mining alt and the money then i would suggest JC/Engineering if you are only picked up for tanking in raids else pick JC/BS as this gives you more flexibility and JC/mining if money is an issue.

It does work on all typ of gloves, though it is not multiplied by the bearform bonus as any other bonus armor.
