If you spellsteal a stacking magic effect I'm pretty sure you will only take 1 of the buffs and not the whole stack.

what about earthshield? i stole the whole thing from a resto shammie i was dueling 2 seconds after he put it on.
also, what about the buff people get from
illustration
... does that mean they have 10 stacks of dispell fodder for that? that doesn't seem right.

Spellsteal isn't dispel and it wont trigger the bloom.
You, my friend, are wrong. Dispeling the last stack of lifebloom causes it to trigger.

I've read that Spellsteal works as the same mechanics as a dispel so in theory, it should trigger the bloom, but... then would there be a final bloom given to the Mage after he has stolen and recived the HoT? If so, then that means there are not 1 but 2 final blooms based on 1 Lifebloom cast made by the Druid.. Am I looking too much into this?
