Right now I use Healbot to mouse-bind the ten healing/dispelling abilities I'm most likely to use on myself or my team (five button mouse + shift-click), I use Gladius to mouse-bind the ten offensive abilities I'm most likely to use on the other team, and I have my four 'oh-!@#$' buttons keybound to q,e,r, shift-e, and x. I haven't felt the need for additional bindings or flexability yet, although it's probably not the setup of an absolute pro.
Healbot does squat for offensive spells.
Personally, I use the default action bars. I have all the default bars hotkeyed in order of how often I use it, and all my other spells are F1-F12.

I have everything bound to my left hand, in the box from Q-T down thru the B key. My left hand almost never moves. There are some less-used keybinds on 1-5 and F1-F7, but otherwise everything is in easy reach of my left hand in its resting position. Including movement and auto-run. (Lol @ numlock)
All heals are also mouse bound through Grid/Clique, and of course movement with the mouse buttons. So movement and heals are accessible via either keyboard or mouse.
This is essential.
You have two hands, and they each need to be able to do (almost) everything that the other one can.
Here's my setup, though it's kind of like telling you which drawer I keep my pants in and which I keep my sweaters in; do whatever works. Though I strongly recommend arranging your layout in hierarchical fashion, with the most important/useful abilities being the most accessible. More accessible = basically the box formed by E-T-B-C. As for modifiers: no mod = most accessible, then shift, control, then (ugh) alt. Ok, there's the puzzle, now GO! Here's my solution.
A - F => offensive spells (incl mana burn)
G => dispels
Z - C => movement keys (so sue me; I have never used WASD)
V, B => emergencies (V = mana pot, sfiend; B = hstone)
Q => CC (shackle, MC, even mind soothe)
W => soft key (I adjust this awkward key for use with quest items, etc)
E => fear, fade
R => shield, inner fire
T => AoE heals (PoH, H.Nova) and desperate prayer
Y => I AM DISCIPLINE buffs (power infusion, pain suppression)
1-5 => buffs, food
F1-F4 => heals (these are a bit out of the way, but I prefer click-casting by a mile; if I'm in running mode, like in pvp or on hodir, I'll run with the keyboard and click-heal)
caps lock => vent (I turn off push-to-talk in arenas though)
Healbot does squat for offensive spells.True, but you can use Gladius to mouse-bind offensive spells (as Escath mentioned).

as a compromise, I've tried to put a bar of heals near the healing bars (with Bartender) so I can click on heals while running around, but then I got my eyes looking at a

thing (looking at health bars and enemies I already find enough)
Icky...I never click the buttons on my action bars, not during combat. By "click-casting" I meant clicking on my raid frames (i.e., Grid+Clique), not using my mouse on my action bars. It's not hard to move with the mouse and click-heal on the run, since as you implied, you're already paying attention to health bars in your raid frames.
The action bar option is for keyboard use only.
