It depends on their strategy. Sometimes you have to kite the melee, sometimes stick on the dps.
Like, I play feral/prot healer, and the best way to kill a paladin/melee team is for me to focus the melee and allow him to heal undisturbed and I can drag them around LoS to stress their healer while my healer is free to throw stuns/silences at will, and a well timed CC chain of stun/silence/cyclone will a lot of times end the match.
My healer used to play with a DK, and a lot of the DK strategy is waiting for CD's. This is one of the reasons I always have, and always will say that DG and CoI are OP. They aren't "reducing our burst,"(as the DK's claim) they are waiting for cooldowns, and get to freely peel whenever the hell they want.
If you do enough burst, a lot of times you can focus the disc, and let him get comfortable while spamming Mana burn. Then, when he realizes he needs to heal, you can interupt his pennance, and pop him with Strangulate while he doesn't have any defenses up.
Don't interupt Mana burn unless he's just completely outplaying you and you have to play outlast
.
As a prot healer, remember, you can't use your holy shield advantage if you are casting. If melee is getting intense, back up against a wall, use your avoidance, and bait heals for interupts. Know how to spot interupts that missed(sight and sound), and how long the cooldowns are. Don't be afraid to Cleanse spam while using your shield to full advantage, then LoS and stun the melee so his healer can't dispell the stun and heal back up to full.
