I can't look up your gear from here, but here's my two cents.
By gemming and enchanting all of your gear, even if its not your BiS for your class/spec, you show to your raidmates that you are serious about your role in the raid. When I was gearing my pally, any epics I got, 200 item lv included, I enchanted them with the best I could, minus the 63 SP enchant on the weapon (I used 50 SP instead, good and much cheaper). As a holy pally in patch 3.1 your best bet is to gem intellect. Intellect increases your mana pool and passively increases your SP and crit. It also increases how much Divine Plea returns every minute because its based on your total mana pool.
Shooting for 500 haste and as much crit as you can from gear is ideal. Never ever forget to Divine Plea when your mana drops below 75% and use the various abilities given to you to mitigate the healing gimp from using it. You can pop wings, Divine Illumination and a SP trinket if you got it for the first one, Divine SHield on yourself and Hand of Sacrifice on the tank for another one, pop Wings/Trinket/D. Illumination again for the 3rd and so on. I wish you luck in Ulduar 10!
