Quetion about hit and Defense

Hey, new pally here (my previous characters was a mage and a hunter so being out on the front lines is pretty new to me), just wanna ask If I'm overstuffed with hit and If I should re gem to reach the defense cap first then worry about hit later.
I've already done heroic Nexus and Azjol-Nerub( . . . did I spell that right?) , and survived it, though we did wipe on Anubarak twice. mainly because the DPS got to close to the bug and got pounded . . . literally.

(Also, just wondering, I always seem to run OOM when I use SoV. My friend said its ok since my gear was not yet optimal. just wondering if this is true)

you really should try to get to the defense cap as fast as possible, being crittable is a thousand times worse then missing once in a while. Most bosses will oneshot crit you, so it's good to extinguish that possibility.
The reason that you are going OOM is that you don't have any points in spiritual attunement, get atleast 1 point in it. That plus Divine plea and blessing of sanctuary should keep you from going oom.

Head enchant from Argent Crusade
Get rid of the +hit gem in your neck, and consider replacing it with a
JC'ed option
Shoulder enchant from Sons of Hodir
You might consider replacing your chest enchant with Defense
+stats to bracers
Threat/parry on gloves
Don't forget leg armor patch
Replace both of your rings with better defense rings - especially since you're a JC, you have
one easy option
Get rid of the hit gems period!
You're not "overstuffed for hit" - rather, you're gemming/enchanting for +hit at the expense of MUCH needed defense.
Also, I'm sure some tanking JCs would suggest you use Dragon's Eyes for Sta, but all of us will say to use dodge/sta or dodge/def for your "regular" gem cuts.
Also if you have not quested in Zul'drak there's a pair of nice defense weapons from the
Ragemane's Flipper
quest, not to mention the
defense weapon
option available through the Argent Tournament.

Thanks for the feedback. I actually put in the 2 points in imp. judgment because I have serious latency issues, and was afraid that I would mess up my 969 rotation. (first thing I actually researched when i was making my pally, at the behest of a friend of mine who got tired of tanking and went with a rogue.)
I'll try reallocating that 1 point from imp. judge to spiritual attunement and see how it goes. If not, would it be ok to reallocate 1 point from Conviction instead? as for my weapon, I'm actually working on getting the argent tourney axe :) Also, I'm still working on getting the recipe for the titanium ring and necklace, just a few more days. A question though, If I can, do you think I should make the titanium neck or go after the heroism neck?
Okay, once the server is up I'm definitely making the changes you guys suggested, especially about the +hit gems (habit I picked up when I was playing my mage). <sigh> looks like im gonna have to raid my mage's stash again enchant mats. Oh well.
