I think the original poster hit all of the important things. All except one:
The flipping health pool that is easily maintained through Blood talents and stamina gear. I mean jesus, every time I see a Death Knight without a single piece of PvP gear, they always seem to have 25k+ HP unbuffed.
The other thing that is most bothersome is that there is no huge correlation between damage output and stat investments.What I mean is, that all they have to do is stack strength and they can nuke you. Prot pallys have the same stamina (and annoying stuns on top of that), but they can't really burst players down quickly. I want to see the same kind of sacrifice implied into Death Knights.

I play a Hunter and I'm probably not the best pvper. I pvp when I'm not doing pve stuff.
But, I don't really have problem with DK's. I can usually out play them and kill them one on one (they Death Grip too soon...honestly, wait for the Hunter to Disengage before you Death Grip them).
My problem is with Pallies. They have their stuns, their heals, their bubble, etc. An 'ok' Pally takes forever to kill and usually requires a few people to kill the Pally, UNLESS there is a DK around.
I know that Pallies think that they are just fine, but you're not. You can outlive anyone out there (except Trees, but then Trees can't kill anything either). You're complaining that the DK's are too easy/kill you too easily. But, I think you need to look in the mirror. Dk's may be your bane, but Pallies are pretty much everyone else's.
Honestly, name one class that can run into a group of 3 other classes and have a DECENT shot of coming out alive.
Feral Tank against anything but casters
Prot Pally
Hunter
Warlock (AoE Fear group, Desto them dead)
Mage (Frost)
Ret Pally (Repentance)
DK
Resto Druid (Meld/catform away, HoT if in trouble. you said 'run in to' and 'alive', not 'duel' and 'kill'
Warrior
Priest (MC the best of the bunch after PSing them)
Honestly, it depends on what the classes are.
Any tank against other melee yes, any healer against anything but a DK/major CC player yes, any DK/warlock against other casters yes....

I hate to inform u that a prot paladin has more burst now than a ret paladin.
