So what mods or add-ons do you consider to be absolutely necessary for various aspects of the game? I'm a minimalist, and I use the default UI. I only download a mod if I see it as a necessity or as adding a capability I'd really like to have. I'm curious what the rest of you think.

You should definitely be using things like
RatingBuster
and
Auctioneer
. They provide a lot of information and don't add much (or anything) to the standard UI.
MoveAnything
might also be of some use.
Depending on your class, if you're a caster, you want to get
Quartz
. Having a castbar that factors in latency is a really big help.
A good Cooldown/DoT timer is also essential. I use
DoTimer
.

The default UI is not a minimalist UI. Perhaps your confusing the term.
Minimalist = Using mods that reduce the amount of stuff on your screen to a bare minimum.
What your describing by using the Default UI is someone that just doesnt want to load thier memory down with addons.
As far as mods that most people consider necessary to play the game...
Omen
for watching threat
Deadly Boss Mods
for raiding as it tells when specific things are happening during a fight.
For true Minimalist things...
Bartender
for getting rid of the default Blizzard button bars and reducing thier size/clutter
Chinchilla
to move/reduce the area the minimap takes up
Satrina Buff Frames
to move/reduce visible buffs/debuffs on yourself, target, party, etc.
Grid
for altering how the raid frames look/work (also highly prefered if you play a healer)
Clique
lets you cast spells by clicking on the frames.
