SoV is the default tanking seal, when paired with Glyph of Seal of Vengeance. This is due to a +10 expertise total from the glyph.
BoS is the default tanking blessing, due to the easy mana regen. You should have been using it already.
10-man Vault of Archavon can take 20 minutes. 10-man Obsidian Sanctum can take a half hour. Other than that, I don't know - I've never done any completely. Just two wings of Naxx that took ~2 hours.
Your defense is a little high - 540 is the required minimum for raids. You could probably use stamina/stats on shield and chest, respectively.
Don't gem for Parry (gloves) - gem for Dodge. Since your Defense is "so high" you could probably replace alot of your 8dodge/def gems with 8dodge/12sta, or straight stamina.
Might want to replace your AP trinket for something with Shield Block (
Lavanthor's Talisman
) or the
stamina trinket
from heroic AN.
Talent-wise,
this
is what I currently use. Divine Guardian is more of a Ret talent for raiding, and the 8-second judgement will throw off your 969. Plus, points in Crusade and Conviction = more threat.

I hear u lose a lot of defense rating with Naxx gear, do I gem for it again or would the trinket and a better tanking weapon make up for it?. .
This I can't answer, I'm not Naxx-geared ;)
I use Kings because I'm a little on the low end when it comes to my health(probably cause I need to re-gem), but with them retooling BoS I'm sure I'll gladly use it. Who uses Kings then?
Base health on my own paladin is 24634; I know I need upgrades (still wearing some Temp Saronite and Daunting) but I was able to successfully off-tank Naxx 10 with 19k base health. (I had pretty darned good healers and only died twice - Dance and Rasuvious).
I've had requests that I put points in Divinity in the past. I did and it's worked since then. I noticed most builds don't include it, but I find it hard to ditch especially since I only do pug groups. I might just have to give it up though.
If it works for you, that's great :) On the other hand, it can be useful if you have a subpar healer.
Is the defense cap the same(540) for Heroics, 10-mans, and 25-mans?
Defense minimum to become uncrittable is:
530 = regular 80s
535 = heroics
540 = raids (level 83 mobs)
Since stupid me is unfamiliar with Sacred Shield..., maybe I just don't get why Divine Guardian wouldn't be great. Longer duration and more damage absorbtion sound sweet to me.
Just personal preference for me really :) but most standard prot builds don't include it.
So should I consider replacing a glyph for the Vengeance one?
IMO definitely; you'll notice less dodges/parries against your swings, which means more threat :)

And most of those topics I mentioned were pre WotLK. Has a whole lot changed with threat? Also, don't most DPS classes have abilities(passive or activated) that either lower or shift threat output, allowing them to micro-manage it to an extent?
All except Warlocks. And they complain about it constantly ;)
Most don't use them though. I can't remember the last time I saw a hunter Feign Death during Vault of Archavon or even a heroic group - they just go balls out DPS and then complain when they get slapped by the mob/boss.
