if you play the burst game, tailoring sounds a better option than passive SP, because the spellpower embroider procs usually on the beginning of the fight, thus giving you full burst potential to begin with. If you enjoy having those little "pseudo-wings" moments, tailoring is superior. (Note: he's probably using Eng. trinkets, so i ignored JC trinkets. Some of those are quite good, but if you're not human and need medallion, and use gnomish lightning, JC trinkets would be redundant.)
For control games you don't want the spellpower proc in the beginning, and tailor could be less atractive.
Fit whichever accords to your playstyle.

I'd say the second best profession is probably jewelcrafting. Because the gems are prismatic you do not have to waste gems socketing for a meta, and you will get additonal stats by meeting 3 more socket bonuses that you would have otherwise just ignored.

I have found JC to be quite popular with warriors or melee in general
as for the other prof, really up to you, I do mining

This will be nerfed 3.2. Dragon's eye gems will match their color.
