Coral, that's actually a very valid method of leveling, but it's like the aoe prot build for paladins in that you have to find the right areas with lots of melee targets.
In my 50's, I shot up to 60 back in the day by going into Un'goro Crater and walking backwards through the Ravasaur nests always having 3 or 4 on me at any given time.
You can do this in Western Plaguelands too, but with casters sprinkled around, you need to watch where you go more.
It's all about finding the areas with densely packed melee mobs.

In the long run cat is probably faster. The basic mechanics of energy are very friendly for leveling (i.e. starting from full energy on a series of short burst damage kills, then your energy regenerates as you run to the next mob). This allows you to do far more DPS on each mob than the DPS you could sustain over a long period of time without breaks. The rage mechanic is not so useful when leveling (the rage decays away between mobs, you often start from zero/10 rage, the quest mobs often don't really hit hard enough to allow decent bear DPS, and when you shapeshift you lose most of your rage).
If you really want to level with bear you could save your bear antics for tanking instances with less than 5 people (which gives a decent ish amount of XP). For outdoor questing I would really recommend staying in cat form.

I would go more with this spec. Thick hide isn't much mitigation at all, and you will do more damage. Since you will be spamming mangle the majority of the time, imp mangle isn't a bad idea.
The remaining points are up to you. KotJ will improve your burst, and your kitty dps will still be good for 1v1 encounters. Rend and Tear is more useful when you can shred, and when you are solo, you can't shred as much, but it will help you if you are multi mob grinding.
Just a tip from someone who knows....
AoE grinding as a bear is not as viable as prot paladin aoe grinding. You don't survive nearly as long because you lack mitigation and self healing compaired to a prot paladin.
The difference between prot and bear aoe?
Prot can handle 6-10 mobs depending on how good your gear is and probably be between 50-100% easily afterwards. Bear, I wouldn't push past 5 or 6 or you will be healing a lot between pulls.

I more-or-less AoE grinded from level 74 to 76 in Borean Tundra (mostly out of boredom and curiousity) in Bear Form, my build was similar to yours.
Method:
Run around spamming Demoralizing Roar until I have 3-4 packs of rhinos on me. (15-20 mobs)
Position them all in front of me (for mitigations sake)
Barkskin + Frenzied Regen + Survival Instincts (I'm usually already at 40-50% HP just from the round up)
Spam Swipe and Maul.
When all the Rhinos are dead, I'm probably at 30-40% hp.
Spend the next 3-5 minutes looting and skinning
All cooldowns are back up, repeat.
If you overdo it (and you're a Night Elf), Shadowmeld can save you, sometimes.
Bear in mind, the Borean Rhinos are level 67-68, and I was ~75. This method also works when I do my Oracles dailies, I go to the Arena thing in the Frenzyheart village and I can pull the whole pack of them, I think there's ~20 mobs in that pull.
(The pupose of my post was basically to agree that its possible to do this. I don't think it will be any faster, but if its more fun, then I say go for it.)
