I would have to say druid.
I only tried to solo for Anzu once, and I died and the whole room respawned so i said that was enough lol, as for the older mounts i haven't tried Attumen solo, but i have done all of Zul'Gurub it wasnt easy even at 80 lol.

Which one should I lvl? The paladin is 66 and druid is 63 so no real difference in lvl.
The number one thing I want to do is solo mount runs. Which one is better for this?
Based on that idea I will lvl the one you suggest.
I want to solo heroic magister's terrace (possible?), Kara horseman, heroic sethekk, and all the old world mounts. I am an achievement $%^&* as well.
I'm about 95% that as a paladin, I could have soloed Attumen (tanked him with two other death knights, he hits worse and has less health than level 80 elites I've soloed.)
I am a paladin. I can easily solo Strath for the mount, haven't tried H MgT or H Sethek and for achievements, I soloed BRD and Scholo very easily.
As a paladin you should be able to solo all the ones that you have listed that are Heroics, otherwise you may need a partner or two, for the raid instances, like kara.
Hope this helps, I haven't tried it as a druid, but I will be sure to ask my friend who is a Druid and is very much a Mount #$%^&.

Druids ability to STEALTH is a real timesaver when soloing for mounts.
