I am pretty sure they changed that rule, now a PvE character can go to a PvP realm. My reccomendation would be to level your hunter to 80 before you send it over (should you be able to). PvP ganking shennanigans can be pretty annoying if your trying to level a character. Leveling professions might also be a good idea before you make the Xfer, PvP server economies are generally more expensive then PvE.

Depends on horde or alliance. But even that doesn't matter much. There will always be ganking in STV, Tanaris, Hellfire, and to a lesser extent, starting zones in Northrend.
IMO, world PvP in outlands and higher is retarded. You have 80's with epic flying mounts flying around ganking DK's because it's their "payback" for getting rocked in arena/BG's. So, even if you have an 80, you can't gank them back unless they get really retarded and stay on the ground, which they don't. Once an 80 shows up, they hover and wait for the 80 to leave, once a lowbie comes around, they land, gank, and take flight again.
If you want to learn about world PvP, level on a PvP realm. Otherwise, it's the same as a PvE realm. PvP happens in WG, BG, and arena for the most part. Other than that, it's lowbie ganking, and the occasional stealthie ganking in large cities for random fun. There's usually random horde in the tram as well.

True, Sholozar and Storm Peaks have a lot of dailies, so there is a fair population of 80's in each.

The tram is awesome when your horde. I use it to reach IF for fishing (still haven't caught Old Ironjaw, I swear I get more HKs then fish by that pond).
Tram = awesome. As soon as they come up with a sweet transport system for horde, you guys are free to hang out there.
The main issue with a PvP realm is HFP ganking anyways. You get these ridiculous players (me too, but I digress) who wtfpwn people on epic fliers then run away when real competition shows up. In my case I click thunderstorm and use a parachute :P. I remember when I tried to level a DK alt on a PvP server right when rolling cross server was permitted. I spent 75% of my time getting ganked, and gave up on it.
Flying mounts kinda messed up World PvP somewhat, though Azeroth is still fun.

Ganking isn't as common as people in PvE servers might think. I regularly play on a PvE server and a PvP server, and didn't get bothered much on the pvp server except in instances where you are forced to compete with the opposing faction (stv, hellfire, borean come to mind.)
Otherwise the only places where you sure to see some action would be at meeting stones like outside of ulduar. (this is probably the only time i get annoyed at world pvp, i hate when mages try to gank you by the ulduar stone while you try to summon there, then run to the camp thats close by making the guards aggro you if you try to kill them.
