Just started PVP...but not sure where to really START

Getting the crafted pvp set is a nice boost for surviving til you have the honor to buy the nicer pieces.

1. Start arenas now. If you want points fast, create a 5v5 team. Grab a bunch of random guys by saying: "LFM 5v5 team. Just for points." in trade chat. Buy hateful set with your arena points.
2. Do Wintergrasp to get the Platinium Disk of Battle and Titan-forged Rune of Determination ( 50 marks for both ). Don't forget to do the WG quests ( each can be done weekly ). The chestpiece ( 40 marks ) is also an excellent choice.
3. If it's a BG weekend, do that BG. Check trade chat for premades looking for more. If it's not the weekend, get marks to do For Great Honor/Concerted Efforts.
4. When you'll be fully geared, keep BGing. Stack Honor and BG marks. You'll be ready for the next pvp set.

The hardest part is going to be getting a good weapon.
If your ok with raiding, you will want to try to grab a decent axe asap. The easiest ilvl200 axe to get is probably the one from H HoL. Its a slight improvement over Titansteel destroyer, but if you really want to be successful in pvp, for a melee class your weapon is most important. This means trying to get into a naxx 10 since your in all blues atm and shooting for a death bite. You could also try to get into a uld 10 FL only pug and pick up an ironsoul (its a mace though, but is a bigger step up from TD). Ideally you will want an axe because axe specialization is by far the best for pvp.
Alternatively you could try to get 1850 in arena and directly shoot to a PvP weapon, but that will be pretty difficult.
As for armor, do what everyone else said. BG/wintergrasp/10 arena matches/VoA, etc.

Just so you know the mats and rough estimation of cost if you decide to get them.

I am going to be investing in my class specific sets of that crafted PvP gear once I hit 80 on my characters. I've done a bit of research and I would come out with 466 Resilience - not considering sockets / enchants.
Would this be enough Resilience for starting Arenas? I'm a semi casual player and I know I won't be getting near 2000 rating. If 466 would be enough then that would allow me to focus sockets / enchants for other stats.
If it helps, I have a Mage, Druid and soon to be Priest. (If the reccomended Resilience varies).

If the druid and priest are both healing specs, thats not enough to be competitive past 1500-1600 probably. Aside from res, hp is also important for healers as well. For the mage its fine, but they don't really use too much of the pvp set since they need haste rating from pve gears (so alot of their res will come from offset/accessories/trinkets). Healers need the most res out of everyone.
I wouldn't recommend jumping strait into arena with the pvp crafted blue set, unless your going for 10 quick matches for your 261 points (in 2s). You can use it to farm honor in BG's until you can grab some hateful set + deadly offsets. In the meantime, i would jump into every naxx group you can and shoot for a upgraded weapon asap, even for your healer classes (although its not nearly as crucial as it is for melees).

Thanks mate. What sort of Resilience cap would be viable past 1500 - 1600?
I would be focusing more so on 2v2 I think. I've got a Paladin friend who suggested we go Holy / Feral. As for the Priest, I noticed how Lock / Druid has a lot of synergy so was wanting to have a stab at Shadow / Resto and see how it compares. I guess Mages would do quite nicely with another DPS class like Rogue-Lock so there I can see another reason to go for PvE gear for him.
So: Use crafted set to farm honour & get some early points whilst searching for decent weapon upgrades from Naxx. Invest in Hateful set and then take Arena seriously.
