If you are going to be a tank, and will never be anything but a tank...then Mining and jewelcrafting are the best professions as they give the most stam. If you are going to be a tank some times a healers alot of the times and maybe some ret PVP then jewelcrafting / blacksmithing is deffinatly the way to go. If you break down the numbers not, the only thing a JC/M has over a JC/BS is +2 stam.

That should give you a few more ideas about what to do. I certainly plan to stick with Mining and Blacksmithing for a while yet.
a) Toughness gained from mining is getting a buff (from +50stam to +60stam i believe)
b) The BoP gems of Jewel Crafting are getting a minor nerf
c) I'm currently working on making the original legendary weapons :D

After 3.2, there will no longer be a +sta benefit to mining over BS.
That aside, as others have mentioned the flexibility is really nice if you do multiple roles.
I leveled with mining/Enchanting, and am now thinking about dropping mining for JC. I already have BS and Inscrip alts.
Another thing to consider, depending on your level of progression, is the 'other' BoP benefits.
The JC trinkets are quite nice, as are the Alchemy trinkets, and not having to max out Sons of Hodir faction for shoulder enchants if you pick up Inscription are great.
