Well you can go one of three ways in my opinion to start. Do you want to do pvp? raids? not really interested in either but just like doing stuff?
If you want to pvp start doing battlegrounds to earn honor to buy pvp gear, get into wintergrasp.
If you want to raid start gearing yourself up through instances. If your gear is really bad, do the normal 80 instances (UP, HoL, oculus, CoS) and then when you're sufficient, do heroics till you geared up to start raiding. If you have a lot of gold you can skip some of this by buying pretty decent gear.
Check out the DK forums as to what you should be going for stat wise with one or the other.
If you just wanna run around by yourself do all the quests and check out what you might be interested in as far as dailies go. Icecrown has the most dailies.
As far as reputation goes, if there's a faction you're particularly interested in look it up on here and read the comments on what's the best way to raise rep. If you don't know what you're interested in look them all up and choose.
At 80 it's just about setting goals and achieving them. There's tons of info on this website, once you know how to use it it can answer all your questions about anything wow-related.

what do you do when you hit 80?
Depends on what you enjoy. Do you like PvP? Then work towards becoming a God in the Arena. Do you like running instances? Then join a raiding guild and start gearing up. If none of the above, then maybe its time to try a new class from the start.
