in general, with 1 being the equivalent DPS impact of 1 AP--
mutilate:
hit (under 99) - 2.52
hit (under 315) - 1.84
hit (above 315; entirely unnecessary, really) - 1.20
expertise - 1.88
combat:
hit (under 99) - 1.92
hit (under 315) - 1.68
hit (above 315; again, unnecessary) - 1.28
expertise - 1.52
hat:
hit (under 315) - 1.60
expertise - 2.02

ok i know im reading this wrong because to me, for mutilate it looks like if you have under 99 hit, each point of AP does more dmg then having more than 99 hit
someone please clear this up :S
what that means is that AP has been given an arbitrary value of one, strictly for the purposes of comparison. for example, lets say your hit rating is 75. another point of hit rating, in that case, would be about 250% more effective to your DPS than another AP point.
once you break the first cap at 99 (the special attack hit cap), hit becomes a little less important, and until you reach the poison hit cap at 315, the effectiveness is reduced to about 180% of one AP. ultimately, you wanna aim for at least 270 hit (as 3DG pointed out), with an ultimate goal of that 315 mark.
think of it as a weight scale ( which is exactly what it is, really; also often called an "equivalency points" scale, or "EP")
