So I've been trying to replace our hot water heater (without calling a plumber) all day today. Its been going really smoothly until the cold water pipe (going into the heater) won't stop leaking.
I have the main water valve shut off,
all
sink/bath/shower faucets are open to let excess water drip out, but it has been leaking for hours and I cant get it to stop.
I'm trying to connect the water to the heater but I'm unable to soder it properly (or at all actually) with water still in the line.
So I need to find a way to a.) make the water completely stop dripping or b.) connect the two pipes without sodering but still having a leak-free connection.
Probably a few plumbers out there that play wow... help?

You could 'sweat' the pipes together, or just cut them off behind the leaks, install hose fittings with plumber's tape, and run hoses instead. I'm not a licensed plumber, but I've done both of those.

But doesnt that still require me to heat the pipes? It's next to impossible to do because of the water still dripping, when I try to heat the copper the water slows down the process, turns to steam, then condenses again. The pipe is still hot but not hot enough.

If you have an air compressor you could blow out the pipes after you shut off the water. But heating is a risky venture due to the fact it is still on your wall, and can light it on fire.
Maybe you can use some compression fittings. Cut your pipe off on either side of the leak, and get a few compression to hose fittings and the proper length of hose. If you torque those down properly, they will hold a water tight seal, and then you just connect your hose. No heat needed.
