Alchemy or JC - can't decide. Help!

I am inscription myself, and so from my experience I can say, "herbalism is only easy once you get to northrend, icecrown at that", and heck, i didnt even care what I was picking as long as it gave me pigment.
I dont know what the mining situiation is like, but if you feel that you can do it at the same pace as herbalism, then sure go for mining because with the extra cash flow you can
accelerate
how fast it is taking to up the JC skill by purchasing mats off of the AH.
To me the trade off would be, "how long are you willing to wait for the Alchemy to pay off"

If you have alts that can grind the ore for you, I'd recommend tailoring and JC. Embroideries are completely OP and JC has +39 sp from the three gems; the prismatic gems also means that your gear should never go w/o the socket bonus, and you'll never have never have to worry about activating a meta.
However, with the choices before me, mining + JC.

Every profession in WoW give basically the same bonus to Spell Power, except for tailoring, which is superior to all others. Alchemy gives you not only the normal SP buff, but with flask durations doubled, you tend to save quite a lot of money. Both mining and herbalism make good money---you server may vary on which makes more. JC is great, but with the changes to prismatic gems in 3.2, it is not OP like it used to be.
Want the best combo? Alch/Tailoring.

Tailoring is fantastic, and the mats generally easy to get (just loot and go) - though I think Wool can be a bit tough on Hordeside for some servers - and thus expensive to buy...not having an easily accessible place like Stocks to really farm it quickly. Tailoring/Enchanting can be very expensive to level, but is a nice combo that complement eachother well.
But you've said you've narrowed down to these 2 combos so:
Of the two, Alch will probably give you the most overall benefit since everyone needs potions/flasks (and lots of them) and it's going to be cheaper for you to make your own from your gathering than to buy them. You can make a fair bit of money with it.
JC is nice, though (and I rather wish I'd taken it on my first priest). You get some JC only gems that are just sweet.
*sob of Engineering* <-- Don't. Just don't. And don't let anyone tell you it's a good idea for priest (TEH GOGGLEZ! and SPRINGY ARACHNOWEAVE!) like my n00b-butt did when asking for advice from her well meaning, but engineering-fanatic GL, LoL. It's a
huge
money-sink for a first character, with minimal benefits (even with 3.2's proposed changes).
Honestly, as long as you don't go Engineering, Blacksmithing, or Leatherworking, you can't really go wrong.

Neither mining nor herbalism give anything to your Priest once you hit lvl 80. For leveling herbalism is great (self-heal in shadoform!) but as soon as you ding 80 it becomes almost useless.
Don't chose your profession by the bonus. Right now tailoring and JC are slightly superior but that will change once 3.2 is out (the JC changes have already been announced and I think tailoring also won't be superior anymore then).
All (crafting) professions will give you nearly exactly the same bonus. Just pick any 2 convenient crafting profs if you want to maximize your potential in a raid, it doesn't really matter which ones you chose. Even BS is great since it provides you with lockpicks ;) No need to ask for Rogues to unlock stuff and no need to ever look for low lvl keys in normal dungeons. Sure, you can't use any of the crafted gear ... but who cares about that anyway? You pick it for the profession bonus.
Alchemy obviously has the advantage of being able to make your own flasks. However (at my server at least) those barely sell for the cost of the mats required to make them so there really is no point in selling flasks to make money - selling the herbs directly will get you exactly the same (on my server ... might of cause be different on other servers).
Still, alchemy saves a ton of money since your stuff will last twice as long, basically cutting potion cost in half for you when raiding. Additionally in 3.2 alchemists will have unlimited and cheap potions (the endless ones get a buff so they are worth using in PvE).
JC has awesome JC-only trinkets. They will last you well within Naxx and maybe even into Uld. JC is also convenient because you can cut your own gems and you don't need to depend on the AH. On my server the cut gems sell for a bit more then the raw ones so it is still a good source of money.
I personally would go with tailoring and enchanting. Enchanting is just so awesome when you are 80. Being able to DE old purples is great, you never have to vendor a good item ever again. Tailoring is the natural choice to go with enchanting, you can DE your tailored stuff and level both professions that way very cheap.
If you don't like that then JC + BS is awesome. Lockpicks just rock, as do the JC-only trinkets. Just farm the mats with a high lvl char you already have (or start with mining + one of them, farm all the mats you need, then drop mining at 80 and use the already farmed mats to level the other profession).
If you don't like that combination either and you really want to stick to your 2 options then I'd suggest that you start out with herbalism + alchemy. You can use the free self-heal for leveling and once you hit 80 you simply drop herbalism and pick up enchanting (or tailoring ... I personally prefer enchanting, it provides just so much utility at 80) instead.

Ohh, technically you can get a +18sp bonus from Engineering by enchanting your cloak with springy arachnoweave (which also provides an ability useless to Levitating priests)....
*slams head into desk repeatedly*
Though I guess they're improving that bonus to +27sp with 3.2. Still. Engineering is awful.
