Even those of use who get AP from Agility?
I've been rolling with the AGI meta, partially because I find it the easiest to activate (Enchanted Tear for blue, yellow/orange gem for the yellow socket, AP for red gem slot). Does anyone have a good spreadsheet of sorts for a more thought out answer?

Some classes get 2 ap per Agi, enhancement doesnt. Hence the crit one gives more dps.

No classes get 2AP from Agi, only from Str.
I just want to see how the extra crit makes up for the extra Blue gem and loss of 21+AP.

I would also say go with the agility meta, since they are almost equal from an EP point of view and the meta requirement is easier.
Crit rating is nice because it gives you both melee and spell crit. Agility is nice because you get AP, melee crit, and spellpower.

Agility (often abbreviated AGI) has the following effects:
Increases attack power with ranged weapons (not including wands) or melee weapons for certain classes.
Warriors, hunters and rogues gain 1 ranged attack power for each point of agility.
Hunters, rogues, shamans (as of 3.0.2) and druids in Cat Form gain 1 melee attack power per point of agility.
Increases armor by 2 per point.
Increases chance to score a critical hit with a weapon.
Increases chance to dodge attacks. This is dependent on both class and level.
To all those that believe Agility offers something more than one attack power per point.

I find the 21agi meta to be better since it only requires one lesser (blue) gem to meet the requirement. Ofc if your a JC this might be null and void, but overall only using 1 lesser gem is better dps wise.
Even JC prof enhance shamans will be switching to relentless earthsiege because in 3.2 the dragons eyes lose thier prismatic status and socketing a siren's tear to fufill that is just stupid. Wasting 2 slots on blue gems is pretty much the same as well. Sadly we are forced to make non optimal choices to fufill requirements for optimal stats and thus choose the second best choice out of necessity.
I'd heard that early on, but in the latest
patch notes
, JC gems seem to be getting a buff, and there is no mention of this prismatic removal.

Why? A blue gem slot is quite happily satisfied by an Enchanted Tear. It gives slightly less than a +AP gem, but can be boosted in value by getting a socket bonus activated, and nullifying the need to use a rubbish +stamina hybrid gem. All that 3.2 does is forces me to use a yellow gem for my Agi meta or an extra blue for my Crit meta.
