How far did you play "all classes"?
Priests are awesome in general.
The are
the
healing class. They are as good as Druids for raid healing and as good as Paladins for tank healing. They aren't better then these classes but they are more flexible (since they can do both very well). There really is no minus for Priest healing, you can do anything you want.
They are hardest to level, especially below 20. Mana regen isn't that great and you will be using your wand a lot.
Healers are always needed in raids.
Weak at soloing at first, at about lvl 40 or 50 they become just as strong as any other class.
It's as much fun as any other healing and ranged dd class. For questing you play a ranged caster and they all play very much alike. No major difference here. If you like a Mage then you will like a Priest (for leveling). For raiding they should be the most fun healers. You can do anything so you can freely chose if you want to be an awesome tank healer or an awesome raid healer, meaning you can do whatever you like best.
Enchanting + Tailoring FTW! Best combo ever. Enchanting is just so ridiculously awesome.

Ye, priests are very good:D We are only class wich has 2 healing talent trees:D We are needed not only as healers or dps(wich is very good too, if you get in the drill), but some bosses are made for us(25m naxx instructor) cause MC rulezz! if you have money raise yourself as shadow, and get disc or holy as a second spec to group with other. Deffinately ench and tailor are best, in ench you get materials from your former clothes AND from ones you tailor! and tailoring needs only humanoinds around, to drop cloth, and sometimes gems/leather/adds:) Go on, discover the magic world of Priests, we are everywhere, and by looking at leading world guilds you can see How much we are appreciated.

I'll be quite honest with OP, as someone who quite recently leveled a priest from 1-80, I can assure you that the first 40 levels or so will be a living nightmare. All your spells are inefficient damage->mana wise, which means you will be drinking after every pull or two. You will be insanely, INSANELY squishy; you must choose your pulls VERY carefully. I have leveled many characters, and my priest saw the most graveyard runs.
After level 40 things get better. As shadow, you pick up Shadowform and Vampiric Touch. The combination of the two helps keep the mana flowing (think 5-8 mobs between drinks as opposed to 2-4).
As you get to Outlands, things just keep getting better. Your mana input is almost enough to exceed your outgo, which means that you will RARELY ever be drinking. With proper use of cooldowns, you can solo most 2-3 man group quests. Your spells do alot of damage, and you can handle 3-4 mobs on top of you at once. Northrend is a bit of the same, very painless leveling.
That was my experience, at least as shadow.

I have seen an 80 Warrior who literally has 0 deaths in his statistics.
I have beaten an 80 Paladin in a duel as a 75 Priest.
I have known of Rogues who leveled to 80 using spell power and spirit items.
Point is, this game is not very hard until you Arena/Raid high-end. Any class can easily level and perform their respective tasks until it comes to the extremes.

and by how far i played all the classes i meant to get them to 50-60.
Then I recommend not starting a Priest. Get one of those to lvl 80. A Druid or Shaman if you like healing and have one of them in the 50-60 range (or even a Paladin ... but I find their healing style to be extremely boring).
The game changes so much at 80, it's a whole new experience. Seriously, try that before making more low lvl characters.
