My system specs are actually a little lower than yours (2.6 dual core, 512MB nvidia somethingorother) and I don't have any issues running in Ultra mode. As it stands I'm running with everything (with the exception of shadow detail) maxed out. Even on a bad day in Dalaran, my FPS won't drop below 25 or so.
You should have more than enough computer to run in Ultra Mode.

Yeah. That last notch of shadow detail is a pain though. The shadow system probably has the most impact of any video effect in WoW atm.
I've got a NVidia Geforce 285 GTX (1GB of video RAM), a Core i7 920 CPU (2.66 GHz, 4 cores with Hyperthreading), and 12 GB of DDR3 RAM, and I only get about 20 FPS in Dalaran when running with everything (including shadow detail) maxed at 1680x1050.
The thing to worry about in trying to spec a system for Ultra Mode, is that the WoW graphics engine foundation was laid in 2004 (and actually started a couple years before then), before multiple cores and SLI/Crossfire setups were common. As such it doesn't scale well with SLI, and I'm given the impression won't make use of more than CPU 2 cores at once. Given this, it takes a pretty high end system to run everything maxed, because it won't make efficient use of some lower spec parts that would otherwise kick ass.
It should also be noted that the screen resolution you play at will have a large impact on your video performance as well.
