Knowing the fights will get you a loooong way. With Naxx25 gear, and experience in Ulduar25, you should easily be able to get by with 2 healers if you need to. It's best if they're complementary -- like a resto druid and a holy pally, rather than two holy pallies.

For Razorscale, you should certainly be able to easily 2 heal it.
For XT, if you are going for Hard Mode, I would recommend 3 healing it. If just regular mode, 2 healers should be fine.

Why three healers for XT hard mode?
One of our two healers managed to pull an amazing 332dps because he got bored.
Yes, I forsee standing in the fire to be an issue already.... O.o Ok I will try it with three heals. 2 priests and a pally I think should work fine. Thanks for the insight. I am sure this is going to be like pulling teeth for a while but it will be fun regardless. Thanks again.
For a first try i would advice three healers aswell. There is generally alot of raid damage and even more when people fail. But if it seems that healers are getting bored. Switch to two, you don't want your healers to get lazy. That's dangerous for when you start doing hard modes. :)

When our main raiders go do their 10 man, yeah we 2 heal XT and 1 heal Razorscale. When we do an Alt run 10 man, we 3 heal XT. There is quite a bit of damage on the XT Hard mode, between tank damage, tantrum, spark debuff damage (player exploding), and spark AoE damage (after it spawns).

I wouldn't except a fresh guild to start of with hard modes. And specially not on a **** block as XT and "waste" time on that. The fun comes with the keepers :)

Our guild raids 10man Ulduar weekly, and while we haven't cleared it yet we're a fair way through it (9/13), and we use 3 healers on all fights (with the exception of Hodir where our Paladin tank switches to Holy). I haven't healed it for a few months now, but I think our healers are finding it quite easy now that we've got a stronger, more experienced group.
Fights that I'm sure we could get through with 2 healers if we wanted to (although we haven't tried) would be Razorscale and XT. We just don't see it as a risk worth taking.
