You can never have too much stamina. There isn't a mark you should be aiming for, other than "always more."
Since you are under the expertise cap, you should be putting Expertise/Stamina gems in any red sockets. The prismatic in your belt and bracers should be straight stamina. Add a socket to your gloves and use a straight stamina gem. You have a straight defense gem which should be defense/stamina, and re-enchant your chest to Defense if you are under the 540 mark.
Until you have 26 expertise, expertise rating is twice as good as hit.
Don't sweat the hit cap too much. It's nice to achieve, but don't gem for it and don't use an inferior piece just to get there.
Red Sockets: Expertise/Stamina (if under 26 expertise), otherwise Dodge/Stamina.
Yellow Sockets: Defense/Stamina
Blue Sockets: Straight Stamina
Prismatic Sockets: Straight Stamina
This is assuming the socket bonus isn't absolute trash. The +4 hit on
Shiver isn't worth getting and you should put just 30 Stamina in it. In my current gear I'm hitting every socket bonus because they are all either Stamina bonuses or I get them anyway because the sockets are Blue. Here's my

Enchants: For chest, cloak, and shield, start off with Defense enchants. If you are comfortably over 540 Defense you can start trading those for health enchants (chest first, then shield).
