Making Bad Choices (and mostly living through them)

I put my self up in the LFG system and clearly marked myself as only DPS as I'm a Fury Warrior. Half an hour later, I get an invite into a group and think to my self "This is good. I almost never find a group to do instances." Fresh into Outlands at level 61 I was pretty happy to start getting into instances again because absolutely no one wanted to do Statholme, Sholomance, or Dire Maul.
Low and behold, I get to the instance and we summon everyone and I find out I'm tanking. Both DKs in the group are Blood and I have the most health. No one has a spare shield handy so I'm tanking with two 2-Handers for most of the night until a shield drops. At that point I use one of my 2-Handers and the shield. We did pretty decent except when people didn't get the concept of holding back to let me get aggro or pulling back to avoid extra adds or when the hunter sent out his pet because he was 'special.' (And he rolled Need on a ring with Spirit and Spell power against our Healer after having Aspect of the Pack on for the whole fight so we couldn't move out of the fire. But I digress.)
TL;DR: At what level should tanks have a shield for sure? And if absolutely required, is tanking with a 2-Hander and a shield ok? Tried and mostly succeed at both at level 61 but had a couple issues with health at times when a pull got large.

As long as you have a shield and some degree of tanking gear (some defense to be uncrittable, decent stamina, some avoidance), you should be able to tank as any spec. Make sure you are in defense stance, that's all.
