This is probably a bigger issue here: Paladins have changed conceptually since you played one. No longer is any class supposed to gear itself or spec itself for hybrid roles. You don't wear spell power to deal damage.
If you spec Prot, you wear: Stamina, Strength, Defense Rating, Dodge Rating, Parry Rating, Hit Rating, and Expertise Rating
If you spec Holy you wear: Intellect, Spell Power (replaced spell damage and healing), Critical Strike Rating, Haste Rating, and Mana Gained every 5 seconds (mp5).
If you spec Retribution, you wear: Strength, Critical Strike Rating, Hit Rating, Expertise Rating, Haste Rating, and Armor Penetration Rating.
The game today is nothing like it was back then. Take some time to soak in some of the major changes before you decide what you want to do.
More than just that last trinket is unobtainable. Most of those are useless or not worth the trouble to get. (the first one is priest only and the argent tome was only available during the scourge invasion)
Just level to 80 and grab the best tanking gear you can get your hands on. Spec for Tanking (the spec you linked is fine) and just run into old instances. Just use normal trinkets.
You can't always gather up tons of mobs in old instances anyways. Just look at ZG's axe throwers or spider trash. Gather enough of those and you'll die a very slow death.

once Cataclysm comes out though I do know that I want to solo the instances that once took 20-40 people to clear... for nostalgia's sake.
Those instances will most likely not exist once the next expansion comes out.

Spiritual Focus and Divine Intellect will not be necessary for an instance soloing build.
Seals of the Pure will increase your damage significantly if you don't use Consecrate (which you probably won't due to it being a mana-drain)
Improved Devotion Aura will not make too much of a difference.
5/5 reckoning is significantly better than 1/5 for single targets.
1/2 Guarded by the Light is enough if you're not concerned about spell damage mitigation. You will have Divine Plea up 100% of the time, and for healing you can heal once a minute in bursts most of the time, clicking off Divine Plea during healing.

This build is better suited for regular tanking, but Spiritual Attunement is wasted for soloing instances. You might want to change 2 points from Conviction to Pursuit of Justice for utility purposes.
I usually solo instances in my regular tanking spec, there's no real issues with that.

What's funny about this is that I can 100% identify with you... well kind of. When I tried WoW out for the first time, my first toon was a pally and it was during Vanilla WoW. However, I bought the game and was on the free trial. I hated it and QQ'ed over 40 bucks being failspent.
Years past and I got a roommate who got me into WoW. This is three months before WotLK came out and I was LV 62ish when it finally did. Pallies looked much more fun when I finally rolled one back in April and I'm very happy with tanking and healing as one.
I digress, but there are a lot of helpful links at the top of the Pally forum, check those out and it should answer most of your simpler questions.

You are not going to be casting heals so spiritual focus is trash. Also int isnt needed, so throw out divine intelect.
Hammer of justice is rarely needed so imp can go away.
Reckoning isnt good, it hardly produces threat to be worth 5 points, and it gives mobs a higher chance to parry haste you big. Not a big issue but still not worth making reckoning good.
Talents you missed:
Divine sacrifice if used correctly has allowed me to save the raid wiping multiple times, MT and OT ing.
Imp devotion aura increases yours and your raids survivabilty.
Spiritual attunement gives you free mana, you will be getting healed a lot.
Guarded by the light means you will never need to worry about mana, by having divine plea up all the time (note again that you will not be healing). And it reduces spell damage taken.
At least one point in imp judge is needed to get the 9696 rotation going, the rest i took in ret are mainly fluff.

It's vital on some fights where interrupts are important, and the talents aren't likely to be spent better elsewhere.

I read that interrupting spellcasting has been changed on a previous patch in that a spell can only be interrupted X amount before interruption can no logner occur. Is this still the case?Yes. Pushback (cast time increase due to being hit) can only occur twice and then you're immune to it for that cast.
Interruption (school lockout due to kick or shield bash type abilities) is something different though.
Pushback is what those patchnotes meant when they said 'interruption'. Blizzard isn't a clear as they could be.
Those instances will most likely not exist once the next expansion comes out.
Which instances are you referring to?
Some instances may be revamped for level 85 and not have the original version anymore. Much like the upcoming change to Onyxia's Lair.

Like I said, a standard build will allow you to solo isntances, and it will let you group up without having to respec.
