What spec are you talking about here? I find as prot, doing long solo excursions against one enemy, mana is not a problem as long as I don't use Consecration and AS very sparingly. Really, Judging Wisdom and keeping Divine Plea up all the time has been fine for me.

As ret paladin, I almost never go oom, Judgement of the Wise and the occasional DP, I rarely have problems.

For ret spec seal of righteousness judgement of the wise will keep you up.
For prot if doing mobs one at a time use seal of wise
For 5+ pulls in prot use whatever you want as long as you keep holy sheild up you will get more mana return from bos then you need.
It really fun when doing the icecrown tourny daily where you kill the 10 ghosts of champions try pulling 2 groups (8 in each group) put up holy shield and watch the mana return from bos:)

I've noticed in a number of solo videos i've seen lately that ,almost in all cases, Seal of Wisdom is used exclusively.
The reason is; they are bad. Even bads can AoE.

Then they're not pulling enough. Pulling sets of 3 is not conducive to mana recovery.
Rushing into a room and pulling all 15 mobs in there, on the other hand, is very good for mana recovery, DPS, and generally getting through faster.

All of this above me. However, I still maintain the fact that even when facing one mob, if you stick to just stick to a 96969 without using consecration, your mana pool will last almost indefinitely, and if it does go low, stop using Holy Shield or switch to Seal of Wisdom. When soloing, I generally use SoR or SoV depending on the situation.

Glyph of ShoR? That helps tremendously.

People seem so afraid of seal-dancing.Get
this
minor glyph.
Now if you're soling single mobs I can only assume they are elite and/or take a long time to kill. Stack 5 corruptions on the the mob and 969 away till you're near oom, then pop SoW for about 12 seconds. Pop back into SoC/SoV and hammer right away to make sure your stacks get refreshed. That way you can do top notch dps while still keeping mana up.

You should not be consecrating on single mobs. It just doesnt matter, they are going to die too fast to lose aggro. Divine Plea, and beat away at it with SoV. If you get low on health sit down or turn around. Seal dancing is for silly people or PvPers.

I will speak as a prot paladin - My few seconds of rotation burns around %50 of my mana. Amount divine plea gives my is nothing much how ever due to BoS i will not go oom as long as i have 5+mobs at me. Now since ret pally doesnt have BoS(Blessing of Sanctuary just incase)i assume he is stuck with Seal of Wisdom
protip: dont post when you know little about what youre talking about unless its a question.

A) OP mentioned solo videos and single target, so I assume he's talking about soloing old raid bosses or 70 heroics. Which means, no they don't die fast. (See bolded text)
B) Why shouldn't you use consecration? If you can keep your mana up like me, more dps = more dps = a faster kill.
C) Do call everyone who has a better system than you silly?
