Cannibalize is good because it was a free bandage (cause you could use it in combat), plus is makes for a handy taunt to whoever you killed (assuming you don`t have a druid around doing that cat humping thing)
and "looks" (but having sweet gear that always looks tattered and rotting does get old after awhile)

outside WoTF nothing actually makes undead better. All undead rogues are undead for one of two reasons :
A. to get OP wotf
B. to look cool
In actuality, trolls have the highest raid dps racial in the game, and orcs are going to be, at the least, extremely comprable to undead rogues in PVP, given the 15% racial stun reduction being so huge, on top of on demand AP boost.
If I were rolling a new horde rogue, for both pvp and pve combined, I'd say go orc. They get alot of goodies now.

As far as i can see it:
Troll: Haste racial, but to get max effect you need to be damaged (At 1/3rd of total hp for 30% haste or something), 5% more damage to beasts and 15% less time in movement reduction debuffs.
Orc: 5 expertise with axes and fists, going CQC fists will get you far in reaching expertise cap so that you can focus on getting other stats, and then the AP racial for extra damage. The stun reduction is more of a pvp thing.
Troll haste racial has no health requirement anymore.
CQC has nothing to do with expertise.

what makes undead generally a better horde race for a rogue
No races "are way ahead" of anyone else in PvE or PvP. The differences between races are minor.

I rolled an Undead Rogue back in TBC, when WotF was really OP, because I was interested in PvP and wanted to be competitive. Since then, I've fell in love with the lore, the plight of the Forsaken, and wouldn't reroll just for a racial difference.
Does WotF help against priests and warlocks? Sure, but I can beat them pretty easily regardless.
Does Orc stun resistance help a little? Sure, but you can always trinket, evasion, be smart and fan of knives at the right time to stop an enemy rogue from getting their opener in, etc.
Extra haste from a Troll racial? If you do endgame PvE, making sure you have the correct rotation, correct buffs from eating/drinking, flasks, correct gear with spreadsheet, are all more important than some minute temporary buff to haste.
Blood Elves extra 2 seconds to lock down casters, Rogues already have plenty interrupts. Kidney Shot, Kick, Gouge, Blind, etc. And 15 extra energy is almost the same as a Glyph of Vigor, or Glyph of Mutilate, etc. Will 15 energy make you gamebreakingly OP in PvP? No, not unless you're a skilled Rogue with all of your other abilities/tactics.
There really is no MAJOR difference among the races. I just feel anyone who gets nitpicky about pointing out the small discrepancies is failing to see the big picture. Racials get buffed/nerfed all the time. What's great in one patch might be bad in another. Therefore, pick a race in which you like the movements, looks, lore, just like I fell in love with my Undead. Truly enjoying your character is the key to wanting to improve and be the best you can possibly be, PvE or PvP.
