The degree to which people encounter asshat-behaviour probably also depends on how much this type of behaviour gets to them. I stopped playing LFD a lot, because of the asshat-brigade. There were too many people being rude and obnoxious. Most weren't, but enough were to put me off LFD.
As to why. I don't think ass-hattism is a conscious decision. People don't see each other on Wow (or internet etc.). People are more civil when face-to-face. Probably because we get direct feedback on our behaviour mainly through body-language. As most people do not seek confrontation and want to be liked, we adapt out behaviour to avoid confrontation and to be liked (based on this feedback). Humans are herd animals, after all.
Without that unconscious feedback there is no direct signal that we're being rude or obnoxious. We don't adapt our behaviour. (Unintentional) bad behaviour causes (un)intentional(?) bad behaviour, which causes bad behaviour etc.
Another factor is probably that without direct and personal negative consequences people forget themselves. If someone can be rude and not suffer for it, then some lack the self-discipline to behave themselves.
After a while the ass-hat behaviour has become normal.
Then again, some people are just #$%^&*!s and choose to behave like that, because no-one can punch their lights out online.
