So maybe someone can clue me in on why healers live and die for Grid/Vuhdo...?
I mainly heal on my Shaman, and I've gotten by (well, in heroic 5 mans, not serious business) with a series of mouseover macros and my Stuf unit frames.
Is there some glaringly obvious benefit I'm missing out on here? Or is it just a matter of me using the addons and not having to have 8+ healing macros?

I use vuhdo pretty much exclusively. I started off on healbot (which now seems like a less useful version of vuhdo). Tried Grid/Clique and Vuhdo at the same time when I heard about them. Vuhdo seemed to work better for me, not too much set up to do, can get nice sized bars, show hots and debuffs. Basically does everything Grid does but I've just found it a bit easier to use.
At the end of the day, try both, see how you get on. With the new raid frames in wow you could probably get away with mouseover macros or just use clique.
I tried Grid and it looks nice and is equal customizable as Vuhdo is, but I'm more comfortable with Vuhdo. I just wish I knew what I was doing wrong with my druid set up for Vuhdo. My pally set up work like a champ but not my druid.
When i set up vuhdo for other healing classes (My main is shaman, also have pally and priest) I just copied the profile across (to keep it looking the same size etc) and changed the HoT icons and spell keys to fit with druid healing.
I'm still only level 42 so don't have all the spells yet but i have rejuv on mousewheel up, Healing Touch on Left and Regrowth on Right click. Cleanse/remove corruption spells are always alt right on all my characters. I always try to keep similar spells in similar places so i don't get too confused over my 4 healers.
Sorry bout that wall of text.
TLDR:
Try both vuhdo/grid and see which you prefer.
Try copying your pally profile for Vuhdo and have a little play around with the HoT's and spells.

used grid click since I had my heling spec.
Started using vudoo and its about the same.
Have not tried healbot since it first came out. Didn't like it at that time, don't know about it now.

I use plain Grid and mouse-over macro's for my resto shaman, and when I dabbled with resto on my druid.
It makes healing very simple.

My heart belongs to healbot.
I almost cried with frustration when I first got healbot. I use grid these days. So much easier.

ok for all you who use grid, what do you use for your mouse bindings? You have to leave one mouse key open so you can access menus and to select targets. I blindly tested grid and bound a spell to both mouse keys and was screwed when it came to the end of the dungeon and i wanted to leave the party.
I just made my own mouse-over macros, and I use plain Grid. I haven't modified it at all.
Healing for me on shammy is now 4 buttons and filling in squares.
