IMO, LW and ENG are the most suitable professions for the high level hunter.

That's exactly what I am (JC > LW though).

With Leatherworking you can do:
Cloak of Beasts
Razorshell Chest
Bloodied Dragonscale Bracers
With Engeneering you can do:
Kickback 5000
Overpowered Chicken Splitter
Finely-Tuned Throat Needler
Volatile Thunderstick
And with Jewelcrafting, besides the gems you can do:
Brazen Elementium Medallion
Entwined Elementium Choker
Elementium Destroyer's Ring
Band of Blades
Guess now it's your call...

With Engineering you get
death
, and because you're a Hunter without a way to prevent or negate the damage through self-heals or some sort of cooldown, you will die to it.
Sucks to be a Hunter eh (conclusion don't enchant Nitro Boosts).

Oh, Blizzard. If every class had a self heal this would be a funny/entertaining ability.
It's a shame Hunters are the only ones that don't.

No. On the contrary, go from Engineering to Leatherworking if you don't have LW. There is no good glove enchant in Cataclysm for Hunters (we would still be using the old Hyperspeeds, as the Tazik Shockers are complete garbage), and Agility is so much more DPS than other stats that Leatherworking's 130 Agi enchant is going to be the best bang for your buck.

You can level with skinning + LW, than change the skinning to JC or ENG when you max LW.

Leatherworkers get
Draconic Embossment - Agility
.
I don't see any standard non-LW agility enchant for bracers.
Leatherworking doesn't have a specialty anymore.
JCs get
+67 Agility gems
over the standard
+40
(+81 Agility boost).
Engineering... I haven't really looked in detail yet.
My hunter has LW and Eng, and I plan on sticking with it, but I'll be working on alts with Skinning and Mining too.
Tell me, with all the gear made for hunters having a huge amount of agility, will these enhancements and gems be really useful?
We could use these enhancements and gems on other stats like haste, mastery and critical hit, to reach the caps.

I was considering this. Dropping skinning for engineering. It would be trivial to level skinning back up if i decided i didn't like engineering. The thing is, there is probably some good gold to be made skinning in the first few months of cata. But yeah I would like some of those engineering toys. I've been drooling over them for some time now.
As an engineer in real life (oh, wait!), I could do nothing else instead of being an engineer in WoW. My doubt stays on LW x JC. I think I'm gonna stay with LW for the agility buffs and make a JC alt for the shiny stuff.

Keep Enchanting for
+40 Agility
to Rings I think.
That just leaves: what would be the "normal" enchant for Hunter Bracers? +50 Hit? +65 Haste? +65 Crit? I'm kinda hoping there's a missing +50 Agility from the database.
I didn't see one in the beta.
Also 50 agility is 50 agility... as well as making epic LW patterns. =\
Enchanting hasn't made it's investment back at all.
I've never liked enchanting in the past... It seems more like a warrior or paladin stuff.
