Well, yes and no. Kyonu is right about the dropped recipes (well, based on prior expansions anyway), but the good ones don't exist yet! They normally get added with higher raid tiers.
Zanzibar is on about max skill level though, 525, and for the 3 armour-making professions that's a fair point.
Take BS - Unless you're talking pvp (and even then I'm not so sure how good resi is now),
Elementium Deathplate
(available at skill 515) is demonstrably better than
Vicious Pyrium Breastplate
, which needs skill 525.
Ok, the mats are a lot more expensive for the lower skill item, and you need chaos orbs, but there's currently no reason to get 525 skill to craft gear for yourself for PvE. Hell, if you can track down someone else willing to sell you their chaos orbs, or just buy off AH, there's no need to even get to that level, just work out what you need for whatever it is gives you your proffesion-specific stats perk and stop there.
There are however some potential money-making items for all 3 proffs that only become available when you have 525:
Ebonsteel Belt Buckle
Charscale Leg Armor
Powerful Enchanted Spellthread
Whether or not the profit justifies the crazy expenditure in mats you need at the moment to get there...well, that requires a good knowledge of your server's prices, lots of maths and no small amount of luck. Most people only bother getting this kind of stuff for raid-level gear though, so I'd wait a bit for demand to pick up.

I agree with you, the new patterns are seriously underwhelming. What I want to know is why the 1 and only alch stone is for tanks? I miss being able to craft a decent number of items at entry raid level. Admittedly in the past the mats for those entry level pieces may have made it a toss up as to whether you wanted to craft or just go heroic farm instead but you had the recipes and the option.

it's not too bad. I am suprised we can't make a cloak again though, it would be a welcomed addition. Oh, and the spellthreads come in handy.
Edit yet again, I see it pretty much on a par with other crafting professions and it sure beats spending hours gathering.
