I will say that dodge have become a very important thing, since the mobs damage have been increased significantly in this expansion, and especially in raids you really don't want them to hit you..

I agree on that avoidance is more important now, but I don't think this is the reason for it, actually it's kind of the opposite. The bosses do a lower percentage of your per hit now than they did in wrath, and healers can't spam their heals constantly, and are more healing based on the damage you take instead of having heals queued constantly like they did in wrath.
So in wrath a dodged attack meant overhealing and dodging damage that would be healed anyway, and now it means saving the healer some mana, which can be very crucial.
At least that's my view on it.
And on the actual topic (I don't know if this is still relevant but it was last I checked) a parry is worth the same as a dodge, but dodge rating is better as it takes less dodge rating to achieve 1% of dodge than it takes parry to achieve 1% parry.

Dodge and Parry both have the exact same DR and the exact same rating per percentage.

Do we still get parry haste? If so, parry might be slightly better than dodge for more threat generation.
Really, the key stat for prot paladins, the one I've been gemming and optimizing for, is mastery. In fact, I think it's stronger than +STA. I know it's controversial, but my healers love me - they say I'm insanely easy to keep up, that my damage comes in slow and steady, and they don't have to spam big heals on me constantly like they do some other tanks.
I'm running ~10% dodge, ~10% parry, and ~45% block. Every time I block an attack, I block 45% of the damage done, thanks to
Holy Shield
and and my
Eternal Shadowspirit Diamond
meta. I plan on stacking mastery until I hit 102.6% (102.4%? I can't remember, think it's 102.4%) mitigation. At that point, as long as I can keep a total of 102.4% avoidance, I'll be increasing dodge and parry at the expense of mastery. I'm not betting on hitting it cap in this tier (although I haven't done the math) but I can see total mitigation hitting 80-90%.
So stack mastery, and join the revolution!
