Yes, Agility provides the best(over other specs) stat boost because the extra 25% agility being sub.

atm leatherworking is the best profession for rogues of every spec.
every profession (apart from engineering) gives around 80agi as bonus, while LW replaces the 65haste on bracers with 130 agi, which is the biggest boost we have now.
sublety just enhances it even more due to sinister calling.
