You should probably go protection. You can tank as fury or arms too, but it gets progressively harder to do as you level. Prot, meanwhile, doesn't always keep up with the other two specs for soloing, but it's never actually terrible.

At level 30 you can get dual spec for 10g at your class trainer. This allows you to have a second talent spec and action bar set that you can swap out at (almost) any time. My warrior is Protection/Arms. Arms for solo questing, Protection for tanking.
Probably the best piece of advice I can give you for when you do start tanking: don't let the other people in the group rush you. I've been in a lot of random dungeon groups where the DPS are hollering at the tank to pull more mobs, go faster, blah blah blah. Don't. Go at your own pace, go at the speed you feel comfortable with. Take your time and learn how to tank properly rather than steamrolling everything. You will pay for it in the long run, as steamrolling ceases to be an option later in the game. It's a bad habit to develop. If DPS start pulling stuff in groups because you won't go faster, let them die. Don't break your back trying to get aggro off of them. It's the tank's job to pull mobs, or designate someone to pull mobs in special circumstances.

If you want to tank eventually, its always best to get your feet wet early. Prot is actually very good at soloing, especially now that you get Shield Slam at lvl 10. It hits harder than Mortal Strike and Bloodthirst. Until later levels most of your other skills are generally the same. AoE leveling is great as Prot, but I tend to kill things so fast single target as any spec that it really doesn't matter much for questing.
Learning to tank sooner rather than later will be a benefit. A lot of people get stuck in a "dps syndrome" and make terrible tanks later on because of the differences in roles. I'm not saying to always tank every dungeon, but one out of three or like 5 every level bracket or so just to get experience with different types of encounters.
Warrior DPS is always fun, I've always loved the style of Arms DPS. But I personally find it more rewarding to play a tank. It's also fun to be doing 230 dps and 47% of group damage done at lvl 37 as a tank...
