on my hunter I have herbalism and alchemy.
Blacksmithing, tailoring and letherworking are ok but you really cant wear most of what you make. min/maxing might be a consideration if you are a progressive raider.
enchanting, jewelcrafting and alchemy are great for a hunter imo. you could always use those items and they are always in high demand on the AH.
Skinning mining and herbalism support the crafting proffs so you should always be able to sell that stuff too. I'm selling cata stacks for 100-250 g easy.
Now about inscription..... Some glyphs sell very well while others are a waste of mats. You just gotta figure out what works best.

Do you want the professions to make money in the Ah or do you want Raiding Professions?
Lw is great for hunters. Not only do you get the +130 agility bracer enchant but you can make you leg enchants for only a few scales.
Being a Scrib makes alot of money also. I make around 2k gold on my server every other day and don't try that hard. Each Server will have different outcomes.
Scribs and JC both have a very high return. Meaning mats cost low amounts but generate large returns. Its very easy for ether to double or triple there investment. (weekends are the best time to invest) Look at your servers Ah to see what the rate is for cost to profit ratio.
(If a stack of herbs cost 30g can you make 2-3 gylphs that will return you investment, or If a stack of Ore cost 200g to buy can the ore be prospected into a profit by cutting or selling the raw gems?) This is the thing to look for.
