My Archaeology level is currently at 195 but so far all I have found are Dwarf, Night Elf and Troll pieces(fossils too) I was just curious if pieces for the other races open up at a higher level or if I'm not searching in the right areas? I've looked in both Kalimdor and the E.K.

From 1-300 you will only be getting Dwarf, Troll, Nelf and fossil. When you get to Outlands (300 opens that), you will be able to get Orc and Draenei. 375+ will let you go Northrend where you will be able to get Nerubian and Vyrkul.
450+ will let you get to Tol'vir but the digsites share the spawn time with other Azeroth sites.
Hope that helps

Sorry to 'Hijack', but as a follow up to the OPs question, is there any point to going to Outland then Northrend to level your Arch? Does it potentially give any better level jumps? Since the Orc, Draenai, Vrykul and Nerubian rare rewards seem pretty useless and offer nothing for L85 I don't see any reason to venture out there (Achievements aside).
No, you could go from 1-525 in Kalimdor or Eastern Kingdoms if you want to.
