So I am still happy I came back to WoW with Cata.
-I'm actually finding levelling too easy. I do battlegrounds and haven't got to spend much time in any bracket. I've really only done some of Ghostlands, 1/2 of Stranglethorn and part of Felwood for quest xp and I am now level 50. (even my tailoring alt is into the 20s from BGs now too). Timbermaw faction intrigued me back in the day so I will probably spend more time in Felwood.
-One problem I am having is levelling cooking as a Horde character post Cata (a bunch of key levelling recipes are MIA for 225-300 due to changes with npcs). While I am sure answers will be found, at this time the best advice anyone has posted to that is to cook green fish or wolf steaks. (apparently most/all the recipies are still available on Alliance side). Stuck at 274 skill after making stacks of said greens at the moment... and I am now in Gadget to do the Clamette quest but thats only going to get me a few points for the effort as I understand it. Alliance folk could probably make some money on the Neutral AH selling the Felwood bear meat recipes...
-I'm debating locking xp (I hear that is possibly, though I am not clear exactly how to do it). Not for BGs, but to spend some time learning my class better. As a level 50 hunter there is abilities I havent brushed the surface of using. I'm marksmen and my rotation (if I call it that) really doesn't have much thought behind it... mostly because stuff dies so fast atm. My concern is hitting a wall somewhere post 60 (or going into a dungeon with no real grasp of situational role).
-This one's more hunter specific.. but what glyphs are other hunters using at 50? I don't have much selection due to the prices on my server, but I'm curious what I should aim for. I have browsed the class forums btw, but I am in a level range that people don't really talk about.

1. Frost trap.
2. /assist tank
3. ?
4. Profit!
I have a number of XP locked toons. It's great fun if you want to run old content. If you want to be good at your class, level to 85, get all your spell/abilities, and read sites like Wowhead and EJ. And practice/play.
Also. Tame a monkey. They're a lot of fun.

To Lolshami: Been using arcane shot glyph since level 25... it remains my main spam damage in pve was the reason.

I laughed at this... Tamed a monkey soon as I could in Stranglethorn, they currently seem very nice in BG (though apparently being "adjusted" in a coming patch). Besides, nothing is more embarrassing than being killed by someone's monkey (even my pink plainstrider doesn't compare).
Ty for the replies all. I'll look into those recipes and the Org daily.

The
clamlette surprise
is the best way I've found to get past the mia recipe issue as a hordie.
